So lucky for me my in laws have tomatoes in the greenhouse that i could use to make sauce. Well at first, I made some using one of the season packets from
walmart...it was okay. But then i tried this idea i saw on another blog {
here } of roasting your tomatoes with garlic.
OMG this was so yummy.
So our Friday/Saturday consisted of the following:
Get tomatoes ready

Blanch them


Roast them with garlic!!

Of course we needed to alter it a bit. Here we added onions, hot and sweet peppers and extra seasoning. It
didnt taste too hot but we will see after we open those jars!! I may use them for a chili base!

I am so excited to see my pantry filling up. I am thinking about making dilly beans because i have never had them but i am not sure if anyone will like them. We are hoping to freeze corn this weekend. I even tried saving seeds from a heirloom tomato...wish me luck.
This is my last week home before going back to work...ugh.

Did you pressure can them? What else did you put in there... I may have to make some for chili base too... that is a great idea!

no i water bathed them. The mixed one had hot and sweet peppers, onions, oregano, basil, and Paprika.
